What’s the difference between zero-carbon and carbon neutral?

Zero-carbon hosting means that the servers are run using electricity using energy generated from renewables like solar and wind power.

Carbon neutral hosting means that servers use conventionally generated electricity, but that the amount of carbon dioxide (the main greenhouse gas causing climate change) produced during that process is calculated and off-set – investment is made in something that removes the same amount of carbon dioxide from the air (like growing trees).
